Mater Health Foodservice Innovations Case Study

This case study details the collaboration between Mater Health and CBORD in implementing innovative foodservice models across their hospital facilities in South Brisbane, Queensland. Mater Health has been utilizing CBORD’s food production and nutrition management solutions since 2013, focusing on continuous improvement through research and innovation. The study outlines how Mater Health conducted various research studies to evaluate the effectiveness of their foodservice models, particularly the introduction of room service. Results indicated significant improvements in patient satisfaction, nutritional intake, and reduced food waste and costs. The findings showed a 21% increase in energy intake and a 27% increase in protein intake, along with a decrease in plate waste by 12-17%. Additionally, patient meal costs decreased by 25% annually, and overall satisfaction rose from the 68th to the 86th percentile compared to peer hospitals. Mater Health aims to encourage further research and data analysis in foodservice to enhance patient outcomes.
