This technical report outlines the digitalization and automation processes implemented by Incarlopsa, a Spanish pork producer, in their abattoir operations. The modernization initiative began in 2017 with the construction of a new facility capable of processing up to 70,000 pigs weekly. The first phase involved integrating RFID technology for traceability and automation throughout the slaughter process. This system allows for complete control over the transport flow from the reception of pigs to the storage of carcasses. The second phase focused on the cutting room, where a computer-aided cutting system was installed, enabling automatic primal cutting and real-time tracking of yields. The final phase involves managing automatic storage facilities through an inventory system that optimizes storage based on various parameters. The report emphasizes the benefits of automated production planning, seamless traceability, and enhanced quality monitoring, positioning Incarlopsa as a leader in meat processing digitalization.
