This case study details the implementation of the Pentair Haffmans CO2/O2 Gehaltemeter at Boxing Cat Brewery in Shanghai, China. Founded in 2008, Boxing Cat is recognized for its craft beer, producing 30 varieties. The brewery aimed to improve its beer stability by minimizing oxygen ingress during various brewing processes. In 2015, they initiated a pilot trial with the c-DGM instrument, which measures dissolved CO2 and O2 levels. The study outlines the measurement points during the brewing process, including fermentation and tank transfers. The results revealed higher than expected dissolved oxygen (DO) levels, prompting adjustments in line and tank purging processes. The findings also indicated variability in CO2 purity, leading to a decision to change CO2 suppliers. Ultimately, the brewery achieved a significant reduction in DO levels, showcasing the c-DGM's precision and its potential as a valuable tool for craft brewers as they consider future expansions.
