This technical report describes the analysis of aroma components in three types of commercially available apples using a GCMS-QP2050 gas chromatograph mass spectrometer paired with an HS-20 NX headspace sampler. The study involved preparing samples of Sun Fuji and two varieties of Jonagold apples, which were grated and placed into vials for analysis. The report outlines the sample preparation process and the analysis conditions, including the use of the Smart Aroma Database for qualitative analysis. A total of 20 aroma components were identified from the samples, which are detailed in the report. The results were further analyzed using SIMCA17 multivariate data analysis software, allowing for principal component analysis (PCA) and hierarchical clustering analysis. The findings indicate distinct differences in aroma profiles among the apple varieties, which can inform quality control and the development of new fruit varieties. The report concludes that the methodology employed is effective for high-sensitivity analysis of fruit aroma components.
